Ingredients:

  • 3 cloves garlic, peeled
  • 2 tablespoons sunflower seeds (or other seed or nut)
  • ¼ cup olive oil
  • 4 cups spinach
  • Juice of ½ lemon, about 1 1/2 - 2 tablespoons
  • Salt and pepper, to taste

Directions:

  1. Wash hands with soap and warm water.
  2. In a food processor or blender, combine garlic, sunflower seeds, and olive oil. Blend until garlic and sunflower seeds are small pieces.
  3. Add spinach, lemon juice, and salt and pepper. Pulse until smooth, pausing to scrape sides of the bowl, if needed.
