Ingredients:

  • 1 cup peeled, diced kiwi fruit
  • 1 cup fresh, frozen, or canned blueberries
  • 1 cup peaches, fresh or canned in their own juice
  • 1 cup sliced strawberries
  • 2 Tablespoons sugar
  • 4 small slices (1 ounce each) angel food or sponge cake
  • 2 Tablespoons chopped fresh mint (optional)

Directions:

  1. Wash hands with warm water and soap. Wash fresh fruits before preparing.
  2. Mix kiwi fruit, blueberries, peaches, strawberries, and sugar.
  3. Let sit for 30 minutes to juice up.
  4. Place a cake slice on each of 4 plates and divide fruit topping among them.
  5. Top with mint.
  6. Serve immediately.
