
Cheese Stuffed Potatoes
Ingredients:
- 4 baking potatoes (about ½ lb. each)
- 2 cups low fat cottage cheese or Greek yogurt
- 2 Tablespoons low fat (1% or 2%) milk
- 2 Tablespoons onions, chopped small
- Salt and pepper, to taste
- ¼ teaspoon chili powder (optional)
- Toppings, such as:
- Salsa
- Melting cheese, such as mozzarella or cheddar, grated or chopped small
- Green onions, chopped
- Fresh herbs, such as parsley or cilantro, chopped
Directions:
- Wash hands with warm water and soap. Wash fresh vegetables before preparing.
- Preheat oven to 400 degrees or follow directions below to cook potatoes in the microwave.
- Place potatoes in oven and bake until tender, about 30-40 minutes. If using the microwave, pierce potatoes with a fork and cook on high heat for 5-10 minutes until tender.
- Slice each potato in half lengthwise (use caution, potatoes will be hot). Using a spoon scoop potato out of the skin, leaving about ¼-inch thick shells. Set potato aside.
- In a medium bowl, mix cottage cheese or Greek yogurt, milk, onion, salt, and pepper in medium bowl. Add potato to mixture and stir to combine.
- Fill potato shells with mixture and sprinkle chili powder over potatoes.
- Add toppings of your choice and serve immediately.
* Potatoes can be cooked in microwave oven instead. Cook on high heat for 5-10 minutes until tender. Pierce potatoes with fork before cooking, and cover potatoes with waxed paper or paper towel.
