Ingredients:

  • 4 baking potatoes (about ½ lb. each)
  • 2 cups low fat cottage cheese or Greek yogurt
  • 2 Tablespoons low fat (1% or 2%) milk
  • 2 Tablespoons onions, chopped small
  • Salt and pepper, to taste
  • ¼ teaspoon chili powder (optional)
  • Toppings, such as:
  • Salsa
  • Melting cheese, such as mozzarella or cheddar, grated or chopped small
  • Green onions, chopped
  • Fresh herbs, such as parsley or cilantro, chopped

Directions:

  1. Wash hands with warm water and soap. Wash fresh vegetables before preparing.
  2. Preheat oven to 400 degrees or follow directions below to cook potatoes in the microwave. 
  3. Place potatoes in oven and bake until tender, about 30-40 minutes. If using the microwave, pierce potatoes with a fork and cook on high heat for 5-10 minutes until tender. 
  4. Slice each potato in half lengthwise (use caution, potatoes will be hot). Using a spoon scoop potato out of the skin, leaving about ¼-inch thick shells. Set potato aside.
  5. In a medium bowl, mix cottage cheese or Greek yogurt, milk, onion, salt, and pepper in medium bowl. Add potato to mixture and stir to combine.
  6. Fill potato shells with mixture and sprinkle chili powder over potatoes.
  7. Add toppings of your choice and serve immediately.

* Potatoes can be cooked in microwave oven instead. Cook on high heat for 5-10 minutes until tender. Pierce potatoes with fork before cooking, and cover potatoes with waxed paper or paper towel.
