Caraway Cabbage Soup

1 teaspoon vegetable oil
1 cup chopped onions
1 russet potato, peeled and cut into 1/2-inch cubes
4 cups chopped cabbage
1 teaspoon caraway seeds
4 cups low sodium vegetable or chicken broth
¼ teaspoon salt
¼ teaspoon pepper

  1. Wash hands with soap and warm water. Wash fresh vegetables before preparing.
  2. Heat the oil in a large saucepan on medium heat.
  3. Cook the onion until it begins to wilt, about 2 minutes.
  4. Add the potatoes, cabbage, and caraway seeds and stir-fry 1 minute.
  5. Pour in the broth and season with salt and pepper.
  6. Bring to a boil, reduce the heat, and simmer 1 hour.
  7. Serve with a piece of crusty rye bread.
