Ingredients

  • 1 pound great northern beans
  • 3 Tablespoons vegetable oil
  • 1 cup chopped onion
  • 2 cloves garlic, finely chopped
  • 8 cups cold water
  • 3 cups sliced carrots
  • 1 15-ounce can tomatoes, plus liquid
  • 1 teaspoon salt
  • 1 bay leaf
  • ⅓ cup chopped parsley

Directions

  1. Wash hands with soap and warm water. Wash fresh vegetables before preparing.
  2. Soak beans overnight.
  3. In a large saucepan, sauté onions and garlic in oil until tender.
  4. Add beans, water, carrots, tomatoes, salt, bay leaf and parsley.
  5. Bring to a boil. Reduce heat and simmer for 1 ½ hours or until beans are tender.
  6. Serve hot.
